I am having the same problem since the Amazon Music September 19 update. Through Android Auto, Google Assistant's voice command can still make Amazon Music pause, play the previous or next song, and skip the current song, but I have lost the ability to use voice command to play a specific song or album.
On my Android Amazon Music HD app, when I play an album and look at the list of songs being played, every song has a sequence of blue vertical bars under them, in varying amounts. Some with all bars filled, some with only a couple.
You can go to Settings > Music > EQ to adjust your overall iPhone equalizer settings.
