Almost went with English because it was hard to pay attention to all the Mongols trying to kill me while reading subtitles. But eventually my brain adjusted to the old fashioned Japanese and I was less reliant on subtitles. So I went with the Japanese. 1.
For what it's worth this is not a Japanese game. Ghost of Tsushima was developed/written in America, and the English track is the original in this case. Jin's voice actor, Daisuke Tsuji, is a Japanese American as well. As an aside, The Witcher doesn't take place in medieval Scandinavia.
If the English dub is low quality, like xenoblade 2, or has questionable wording and stuff like Japanese honorifics in English for no reason (persona 4/5) I’ll go with Japanese. If the English dub is high quality, like tales of arise, scarlet nexus, code vein, the shin megami tensei series…. I’ll just go English dub.
I think Persona's dubs are pretty good but this is one of those dubs that likes to use Japanese honorifics in English script which I personally find very awkward. The JPN voice acting is great. Morgana's japanese voice fits him a lot more IMO. Japanese it is. You speak English so you should play the English dub.

My only gripe was the subtitles mistranslating 'Sakai-sama', as Jin Sakai, it'd be more akin to Lord Sakai, throughout my entire playthrough, lol.
So I would personally disagree with the notion that Japanese say 「ハッピーバースデイ」over the native phrases due to complexity, but rather novelty or a simple preference for the sound of the loaned english. Many Japanese speakers love the English language which is probably the main reason English loan words have replaced many ...
