First I selected activate on a computer, but under Step 2: Enter activation code when prompted, there is no activation code, it just says Something went wrong. Try again later. So then I tried to log in on the device and it says "we don't recognize your email and/or password. Please try again."

In that case, if it won't let you sign out of Hulu on that device, you'll need to either have a separate Roku account device, or (better in my mind) not subscribe through Roku. Subscribe directly to Hulu and use the credentials for the Hulu account you want on the Roku devices you want. Note: I am not a Roku employee.
As of today, Dec, 19, 2020, Hulu on Roku Ultra is still not working correctly. Issues: Cannot start from beginning on recorded shows. I've posted the root-cause on both Hulu and Roku communities, and tried to explain what's happening in laymen's terms. No more band-aid housekeeping; resetting, reinstalling, rebooting anything. I found the fix on 02/14/2024, and so far to date, Hulu works 100% on every load request.
