Ecosure is different than the regular health-department inspection. Likewise, we are often held to stricter standards than the FDA and local regulatory authorities set (example, hand washing for 20+ seconds rather than 10-15, holding hot food above 140 instead of 135, washing cutting boards after every use instead of every 4 hours, etc).
Focus on your 5 criticals. hot/cold holding temps, hand washing, pests, chemicals, and food contact surfaces. If you have your KM and/or CTs check those 5 categories everyday and are doing your FS30 twice a day, then you shouldn’t have to worry about Ecosure. 114 votes, 20 comments. 88K subscribers in the Chipotle community.
Ecosure will ask 1-2 random people if they got a wellness check and if they know the food safety 7 Obviously they will have gotten a wellness if you did #1 right. When asked the food safety 7, tell him "Why yes, it is right over here!" WALK TO THE POSTER. READ THE POSTER. DO NOT FREEZE AND TRY TO REMEMBER. GOTO THE POSTER IT IS WHY WE HAVE IT.
Ecosure is the name of the company that is hired by Starbucks to make sure that every stores cleanliness is up to standard. The Ecosure people perform the QASA audit, which stands for the Quality Assurance Standards Audit. We haven't been hit yet for cycle two. But ecosure is being super gnarly this time around..
As for when and how often, you set that up as well. You can have them come on a specific day, or randomly over a set time period. We generally give them a monthly window that typically sits before we expect health inspectors to do their regular visits. It sets the mood leading into state inspections. 3.
Reply. Aash_Mehta. •. Yes. We have the city regular health inspections plus this thing from Dairy Queen. Dairy Queen has affiliated with EcoSure so they can come for facility check and everything. Literally everything is checked. Each and everyday ceiling I would say.
It’s basically a mock Ecosure audit done by yourself and will tell you what they’re looking for. Be critical and fix things as you go. A thorough one should take you about 30-45 mins. If you keep doing them youll learn to recognize violations as you see them, even when not actively doing an audit, and can fix them and coach in the moment. 4.
That's one of the worst scores I've seen. Your store will have to be re-audited within two weeks to prove it is back to Starbucks standards. 80% is the actual threshold for passing, but most areas/districts set the minimum expectation at 90%. Your SM is going to be under some serious heat for this, so prepare for some changes.
Yeah, honestly, a morning ecosure isn't that bad, I didn't have enough ready this time. Wasn't expecting ...
