I have recovered my old account, I have tried multiple times, but I have gotten nowhere.... The only thing that I would say is to try and sign into the PSN with the email address and see if it will allow you to reset the password for that PSN account. That would be the only way that I could see what PSN account your email address is attached to. BM. Bmasong1020.
So, even if you have access to this Microsoft account, you will not be able to link your PSN account to a different one. Additionally, please note the game developer also informed this: “As of March 15, 2023, please DO NOT unlink your MSA from your PlayStation account via the in-game menu. You will be unable to link it back if you do so.”.

I'm trying to login to Minecraft on my PS5 but keep getting the message that my Microsoft account is already linked to another PlayStation account. I don't see how this is possible since I've only ever had one PlayStation account, and I haven't linked my Microsoft account to somebody else's PlayStation.

It sounds like you had a PSN Account that was tied to an EA account, you unlinked that account which would result in losing your items, progress, etc as they are saved on an EA account level. You now have the PSN linked to a new EA account and your account has gone through the Cross Progression process but does not have your items, progress, etc.
